My aunt was recently singing praises for her 2nd generation pressure cooker. Apparantly it's the opposite of a crockpot- you can whip up a hot meal in under 30 minutes. I don't always remember to plan ahead for the crockpot, so this just might work for me. I'll have to report back when I purchase one and try it out.

Thanks so much, I was craving a real supper, not just Cheerios and leftover baby scraps! I just put it all together and I'm so excited to have a nice meal ready for my husband and older daughter tonight. I'd love to get other REALLY EASY crockpot recipes.

That sounds YUMMY!
My ace in the hole recipe (and you really cannot call it that..) is the Betty Crocker Chicken Fettucine Alfredo meal in a box (not as nasty salty as many pre-fabs are)! ;) With a bagged salad, we all eat on the cheap, and quick!

I'm just glad it's getting warm out, and I can use the grill without standing in the snow (not that I haven't done it!). So our quick dinner usually involves something on the grill (added bonus - very little cleanup!). My favorites:
-Burgers
-Bratwurst (boiled in beer first, per my midwestern roots - M laughs that I keep "cooking beer" aka Budweiser in the house, just for brats)
-Chicken thighs (they don't dry out like breasts do, and I usually baste them in BBQ sauce. Salt & pepper the thighs, and throw them on the grill. After a few minutes, flip and apply bbq sauce to the slightly-cooked side so sauce doesn't interact with raw meat. Flip and repeat a few times, serve on a bun.)
-Asparagus! Thicker stalks work well, just toss them in some olive oil and salt & pepper, and don't over-cook. Oh, and be careful when putting them on the grill - PERPENDICULAR, or they'll fall through!

I also usually keep tortillas and a bag of shredded mexican cheese blend in the fridge, and we make quesadillas. Served with sour cream and spicy salsa verde. Mmm...
